Fried Celery

Ingredients

Directions

The book gives no oven temperature. The 400°F in the steps was added when the recipe was transcribed, as a starting point.

Prepare the celery

  1. Boil or steam the celery until tender.

  2. Drain the celery on a cloth and let it cool completely.

  3. Season the cooled celery with salt.

Coat and fry

  1. Dip the celery in the beaten egg, then toss in breadcrumbs.

  2. Fry in hot oil (400°F/200°C) until golden brown.

  3. Drain excess oil and serve as a dressed vegetable with tomato sauce.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Celery
Forms the main body of the dish, becoming tender when boiled or steamed and crisp outside when fried.
Beaten egg
Acts as a binder so the breadcrumbs stick to the celery during frying.
Breadcrumbs
Form a crisp, golden coating that browns in the hot oil.

The step that matters

Let the celery cool completely before coating. Celery that is still warm or wet releases steam and moisture, which loosens the egg and breadcrumb coating and can make it slide off or fry unevenly in the oil.

Swap the celery

How well each one fits the dish's main ingredients (egg, tomato, sauce):

  1. Capersfits better
  2. Tarragonfits better
  3. Corianderfits about as well
  4. Celerythe original

Fit is the average pairing score against egg, tomato, sauce. Candidates are from the same food group and used in at least 100 recipes.
