Chicken Salad

Ingredients

Directions

  1. Remove all skin, bone, and tendons from the chicken and cut it into ½-inch cubes.

  2. Season the chicken with salt and pepper.

  3. Tear the lettuce into small pieces or chop the celery.

  4. Mix equal parts of chicken and lettuce or celery with some mayonnaise dressing.

  5. Arrange the mixture in a shallow salad bowl or entree dish and coat with the remaining mayonnaise.

  6. Garnish with small inner leaves of lettuce or celery tops.

  7. Prepare the chicken, lettuce, and dressing in advance, but mix them just before serving.
