Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fine tapioca
Thickens the milk as it simmers, giving the cream its body and set.
Milk
Forms the liquid base that the tapioca swells in and thickens.
Double cream
Adds richness and a light, airy texture when whisked and folded in.
Sugar
Adds sweetness and balances the flavour of the sherry and almond.
Ratafias
Soaked in sherry to form a moist, flavourful base layer under the cream.

The step that matters

Simmer the tapioca in milk until thick. Tapioca starch must be cooked fully in the liquid to swell and thicken; undercooked tapioca stays grainy and fails to set the cream properly.

Swap the nuts

How well each one fits the dish's main ingredients (sherry, milk, sugar, pistachio, cream):

  1. Almondfits better
  2. Chestnutfits better
  3. Cashew nutfits better
  4. Nutsthe original

Fit is the average pairing score against sherry, milk, sugar, pistachio, cream. Candidates are from the same food group and used in at least 100 recipes.
