Ingredients

Directions

The book says “a hot oven”. The 400°F in the steps is the modern equivalent, not the book's own figure.

Bake the shell

  1. Grease a fleur ring and place it on a greased tin.

  2. Roll out the pastry to fit the ring and fill it with baking rice.

  3. Bake in a hot oven (400°F / 200°C) for about 30 minutes.

  4. Remove the rice and crisp the pastry slightly in the oven.

Fill and finish

  1. Once cold, layer apricots or other fruit compote in the pastry and add some syrup.

  2. Pipe or pile sweetened and flavored whipped cream on top.

What each ingredient does

Rich short crust
Forms the crisp, sturdy shell that holds the filling.
Baking rice
Weighs down the pastry during baking so it keeps its shape.
Fruit compote
Adds concentrated fruit flavor and a soft, moist layer.
Sweetened and flavored whipped cream
Adds lightness, richness and a sweet, creamy topping.

The step that matters

Blind baking the pastry shell. Baking rice holds the pastry flat while it sets, preventing puffing and shrinkage. The shell must be fully cooled before filling, or the warm pastry will soften and the cream may melt.
