Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter or margarine
Fat that combines with flour to form the roux, adding richness and flavour.
Flour
Thickens the sauce as it cooks with the fat and stock, giving body.
Stock
Liquid base that hydrates the roux and carries the flavour of the sauce.
Onion
Adds savoury sweetness and aroma as it softens during simmering.
Tomato or carrot
Adds acidity or sweetness and extra body to the sauce.

The step that matters

Frying the roux to golden brown. Cooking flour in fat until golden brown develops nutty flavour and colour, while still thickening the sauce. Stopping too early leaves a raw, pasty taste; too far scorches it and gives bitterness.

Swap the tomato

How well each one fits the dish's main ingredients (butter, onion, flour, pepper):

  1. Chivefits better
  2. Okrafits better
  3. Leekfits better
  4. Tomatothe original

Fit is the average pairing score against butter, onion, flour, pepper. Candidates are from the same food group and used in at least 100 recipes.
