Almond Ring Cakes

Oven, in the book's wordsA quick oven

Ingredients

Directions

The book says “a quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Cream the butter and sugar together until white.

  2. Add the quarter of an egg, then gradually mix in the flour and baking powder until smooth.

  3. Roll out the dough and cut into rounds with a fluted cutter.

  4. Using a piping bag, press some almond mixture around each biscuit.

  5. Bake in a 400°F (200°C) oven for about 15 minutes.

  6. Once cool, place 1/2 teaspoon of red currant jelly in the center of each cake and sprinkle with chopped pistachio nuts.
