What each ingredient does
- Steak
- Supplies the meat flavor and juices that are drawn out into the liquid.
- Water
- Acts as the liquid that extracts flavor and juices from the meat while it stands.
The step that matters
Scrape the meat very finely. Finely scraped meat presents much more surface area to the cooled water, so more juice and flavor pass into the liquid during standing. Coarse pieces would give a weaker, less flavorful result.
