  2. Cut the chicken into small pieces, discarding bones and gristle, and chop finely.

  3. Press the soaked breadcrumbs through a coarse strainer into a pan with the chopped chicken.

Cook

  1. Pour in the broth, skimming off any fat, then add the salt and pepper.

  2. Boil for 1 minute until the mixture is the consistency of thick gruel.

  3. Optionally season with celery salt or add 2 tablespoons of sweet cream.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken meat
Provides the main protein and savory flavor that defines the filling.
Bread soaked in milk
Adds body and binds the mixture, thickening it as it absorbs liquid.
Chicken broth
Adds moisture and flavor, loosening the mixture to a thick gruel consistency.

The step that matters

Boil for 1 minute until the mixture is the consistency of thick gruel. Boiling briefly lets the soaked bread starch thicken the liquid. Too little cooking leaves it thin and runny, while overcooking can make it stiff and pasty.
