Helensburgh Toffee

Ingredients

Directions

The book gives no oven temperature. The 240°F in the steps was added when the recipe was transcribed, as a starting point.

Make the toffee

  1. Melt the butter with water in a pan.

  2. Add the sugar and stir until dissolved.

  3. Boil for five minutes, stirring constantly.

  4. Add the condensed milk and boil to soft ball stage (240°F).

  5. Remove from heat, allow to settle, and add the vanilla essence.

  6. Beat with a wooden spoon until it begins to grain.

  7. Quickly pour into a greased tin.

Set and cut

  1. When set, mark into squares or fingers.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Granulated sugar
Provides the bulk of the sweetness and, when cooked, the hard toffee structure.
Condensed milk
Adds milk solids and sugar, giving the toffee a softer, creamier, chewier texture.
Butter
Adds fat, which makes the toffee tender and rich rather than brittle.
Milk or cream
Adds moisture and dairy solids that contribute to a creamy texture and colour.

The step that matters

Beating until it begins to grain. Beating while the mixture cools causes fine sugar crystals to form, which makes the toffee opaque and firm. Pouring too late can leave it hard to spread, so timing matters.
