Ingredients

Directions

The book says “a brisk oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Wash and boil the macaroni in salted water for about 40 minutes with the lid off, then drain.

Make the dish

  1. Grate the cheese and add nearly all of it to the white sauce, then mix in the macaroni.

  2. Season with salt and pepper, then transfer to a greased pie dish.

  3. Sprinkle a few breadcrumbs on top along with the remaining cheese.

Bake

  1. Heat through in a brisk oven at 400°F (200°C).

What each ingredient does

Macaroni
Forms the body of the dish, giving it bite and substance under the sauce.
White sauce
Provides the creamy, moist base that coats the pasta and carries the flavour.
Grated cheese
Adds richness and flavour, and melts into the sauce to bind it together.
