Why it works: Cabbage and onion match in chemistry and in kitchens. They rank in the top 7% of all ingredient pairs, and cooks put them together in 3,001 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Tender cabbage
Forms the bulk of the dish and softens as it cooks, adding moisture and sweetness.
Rice
Absorbs the cooking liquid and becomes tender, giving the dish its body.
Eggs
Set when poached on top, providing richness and a soft, creamy texture.
Fat
Carries the flavour of the onion and helps it soften without browning.

The step that matters

Cooking the rice in the cabbage. Rice needs enough liquid and gentle heat to become tender without sticking or drying out. Adding the water at the halfway point lets the rice absorb it slowly as the cabbage softens.

Swap the cabbage

How well each one fits the dish's main ingredients (rice, onion, egg):

  1. Chivefits better
  2. Leekfits better
  3. Asparagusfits better
  4. Cabbagethe original

Fit is the average pairing score against rice, onion, egg. Candidates are from the same food group and used in at least 100 recipes.
