Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Forms the main body of the loaf and gives it a firm, sliceable texture.
Pork
Adds fat, which keeps the loaf moist and tender as it cooks.
Eggs
Bind the meat together and help the loaf set as it bakes.
Crackers
Soak up liquid and help hold the loaf together while keeping it tender.
Milk or cream
Adds moisture and softness to the mixture.

The step that matters

Combining the mixture until well combined. Mixing evenly spreads the eggs, crackers and fat through the meat so the loaf binds and bakes uniformly. Overworking ground meat, however, can make it dense and rubbery.

Swap the onion
