What each ingredient does

Chicken
Provides the meat that forms the body of the loaf.
Gelatin
Sets the broth so the loaf holds its shape when sliced.
Chicken broth
Carries the flavour and, once reduced and set, gives the loaf its moist texture.
Hard boiled eggs
Add visible contrast and mild richness in each slice.

The step that matters

Dissolving the gelatin in the broth. Gelatin must fully dissolve in hot broth before setting; undissolved granules leave gritty pockets and weak spots, so the loaf may not hold together when unmolded.
