Yeast Muffins

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the batter

  1. Combine sifted flour, eggs, melted butter, and sugar in a bowl.

  2. Add milk and water in equal parts to create a stiff batter.

  3. Cover the batter.

  4. Let the batter rise overnight.

Rise and bake

  1. In the morning, half fill muffin rings with the batter.

  2. Let the batter rise again.

  3. When the batter reaches the top of the rings, bake in a preheated oven at 400°F (200°C) until golden.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the muffins once baked.
Eggs
Add structure and richness, helping the batter hold its shape.
Sugar
Adds sweetness and helps the crust brown.
Butter
Adds fat for tenderness and flavour.

The step that matters

Letting the batter rise until it reaches the top of the rings. Yeast needs time to lift the batter. Baking before it has risen fully can leave dense muffins, while letting it overproof can cause it to collapse.
