Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Thicken the sauce as they set with gentle heat, giving it body and richness.
Milk
Forms the liquid base of the sauce and carries the thickening egg yolks.
Sugar
Sweetens the sauce and helps stabilise the egg yolks against curdling.

The step that matters

Return the mixture to the double boiler and cook until it slightly thickens.. Egg yolks thicken at gentle heat, but if the sauce gets too hot it can curdle or turn grainy. Keeping the double boiler at a low simmer and stirring steadily gives a smooth, lightly thickened custard.
