Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Preheat the oven to 350°F (175°C).

  2. In a bowl, cream together the sugar and butter.

  3. Add the egg yolks, sweet milk, and grated coconut; mix well.

  4. Pour the mixture into a pie pan lined with pastry.

Top and bake

  1. In another bowl, whip the egg whites until soft peaks form.

  2. Gradually add 2 tablespoons of sugar to the egg whites and continue whipping until stiff peaks form.

  3. Spread the whipped egg whites on top of the pie filling.

  4. Bake until the top is lightly browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Enrich the filling and help it set into a custard-like texture.
Egg whites
Whipped to stiff peaks to form a light, airy topping that browns in the oven.
Butter
Adds richness and tenderness to the filling.
Sugar
Sweetens the filling and helps stabilize the whipped egg whites.
Grated coconut
Adds coconut flavor and moisture with a chewy texture.

The step that matters

Whipping the egg whites. Egg whites must reach stiff peaks, and sugar must be added gradually, for the topping to hold its volume and bake into a light layer. Under-whipped or greasy whites will collapse and make the topping dense.

Swap the coconut

How well each one fits the dish's main ingredients (sugar, butter, egg, milk):
