Baked Fish

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the fish

  1. Preheat the oven to 350°F (175°C).

  2. Dry the cleaned fish with a cloth.

  3. Fill the fish with a mixture of chopped hard-boiled eggs, bread crumbs, pepper, salt, parsley, and onion. Tie the fish securely with kitchen twine to hold the filling.

Bake and serve

  1. Place the fish in a baking pan with a little water.

  2. Bake the fish, basting often to keep it moist.

  3. Once cooked, transfer the fish to a platter and remove the twine.

Make the sauce

  1. Combine the mashed hard-boiled eggs, vinegar, butter, sugar, pepper, and mustard seeds in a saucepan. Cook the mixture until thick.

  2. Pour the sauce over the fish on the platter.

  3. Garnish with chopped egg whites and curled parsley.

What each ingredient does

Fish
Holds the stuffing and forms the main body of the dish as it bakes.
Hard-boiled eggs
Add richness and body to the filling and to the sauce once mashed.
Bread crumbs
Absorb moisture and help bind the stuffing so it holds together.
Vinegar
Adds acidity that sharpens the flavour of the sauce.
Sugar
Balances the sharpness of the vinegar with sweetness in the sauce.
Butter
Adds fat and richness, giving the sauce a smoother mouthfeel.

The step that matters

Basting the fish while it bakes. Fish is lean and dries out quickly in the oven. Regular basting adds moisture to the surface, helping keep the flesh tender through the bake.

Swap the parsley

The recipe marks parsley as optional. How well each one fits the dish's main ingredients (fish, egg, bread, pepper, onion, vinegar, butter):

  1. Parsleythe original
  2. Tarragonfits about as well
  3. Capersfits about as well
  4. Garlicfits about as well

Fit is the average pairing score against fish, egg, bread, pepper, onion, vinegar, butter. Candidates are from the same food group and used in at least 100 recipes.
