  1. Prepare the fish by gashing the sides in several places.

  2. Season the fish with salt and pepper.

Make the stuffing

  1. In a bowl, mix the stale bread crumbs, chopped meat, thyme, cayenne pepper, and egg yolks until well combined.

  2. Stuff the mixture into the gashes and inside the fish.

Bake and serve

  1. Sprinkle the fish with flour and black pepper.

  2. Place the fish in a baking pan and add 1 quart of water.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Egg yolks
Bind the bread crumb stuffing so it holds together during baking.
Stale bread crumbs
Absorb moisture and add body to the stuffing inside the fish.
Sheepshead fish
Forms the main body of the dish, cooked whole with the stuffing inside.

The step that matters

Stuff the mixture into the gashes and inside the fish. Packing the stuffing too loosely can leave gaps where it falls out or cooks unevenly. Filling the cavity and gashes firmly keeps the stuffing in place and helps it cook through alongside the fish.

Swap the thyme

How well each one fits the dish's main ingredients (fish, pepper, bread, meat, egg, flour):

  1. Parsleyfits better
  2. Nutmegfits better
  3. Capersfits better
  4. Thymethe original

Fit is the average pairing score against fish, pepper, bread, meat, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
