Ingredients

Directions

Make the sauce

  1. In a saucepan, mix the butter and flour; heat and stir until well combined and hot.

  2. Stir in the cream, white pepper, grated nutmeg, salt, and cayenne.

Cook and serve

  1. Add the terrapin meat and stir until very hot.

  2. Keep the pan warm but do not boil; stir in the beaten egg yolks.

What each ingredient does

Butter
Enriches the sauce and carries flavour, giving it a rich, smooth mouthfeel.
Flour
Thickens the butter and cream into a smooth, stable sauce.
Cream
Forms the body of the stew, adding richness and a silky texture.
Terrapin meat
Serves as the main protein, giving the stew its substance and flavour.
Egg yolks
Enrich and further thicken the stew when gently heated, giving a custard-like body.
Madeira wine
Adds sweetness and aromatic depth to the finished stew.

The step that matters

Stir in the egg yolks without boiling. Egg yolks thicken by gentle heat; if the stew boils after they are added, the proteins scramble, leaving the sauce grainy and curdled rather than smooth.
