To Render Lard

Ingredients

Directions

  1. Cut the fat into small pieces and wash it well.

  2. Place the fat in a large pot with enough water to start cooking.

  3. Boil rapidly until nearly done.

  4. When the cracklings begin to brown, reduce heat to cook slowly to prevent burning.

  5. The cracklings will turn light brown and sink to the bottom when sufficiently cooked.

  6. If using entrails fat, soak it in water with salt for several days, changing the water often.

  7. After soaking, wash the entrails fat in two or three warm waters and boil as you would leaf lard, using more water.
