Egg and lemon barely smell alike, yet cooks put them together in 44,316 recipes: they work on texture and structure more than aroma.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and fat, giving the sauce a smooth, creamy body.
Egg yolks
Emulsify the butter and set with gentle heat to thicken the sauce.
Lemon juice
Adds acidity that brightens the flavor and balances the rich butter.

The step that matters

Cook over gentle heat while beating. Egg yolks thicken when heated but scramble if they get too hot. Keeping the bowl over simmering water and beating constantly lets the yolks thicken smoothly into an emulsified sauce.
