Baked Onions

Oven, in the book's wordsA slow oven

Ingredients

Directions

The book says “a slow oven”. The 300°F (150°C) in the steps is the modern equivalent, not the book's own figure.

  1. Wash and peel the onions.

  2. Parboil the onions for 30 minutes, then drain.

  3. Remove the centers of the onions and chop them finely with the bacon.

  4. Mix the chopped onion and bacon with bread crumbs, pepper, salt, and cream.

  5. Fill the onions with the mixture.

  6. Place the filled onions in a baking pan with a little water.

  7. Bake in a slow oven at 300°F (150°C) until tender, basting often with melted butter.

Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.
