What each ingredient does

Cabbage
Forms the edible shell and, once chopped, adds bulk and a mild vegetal flavour to the filling.
Force-meat
Provides the main body and richness of the filling, which firms as it cooks.
Prepared mustard
Adds sharp, pungent flavour that cuts through the richness of the meat and butter.
Onion
Contributes savoury sweetness and aroma to the filling as it cooks.
Butter
Adds fat for richness and moisture to the filling.

The step that matters

Wrapping the cabbage tightly. A tight wrap keeps the stuffed head compact so it holds its shape during boiling and the filling stays packed inside rather than falling out into the water.

Swap the cabbage

How well each one fits the dish's main ingredients (meat, mustard, pepper, vinegar, onion, butter):

  1. Shallotfits better
