What each ingredient does

Chicken
Forms the bulk of the croquettes and provides the main filling texture and flavor.
Egg yolks
Enrich the filling and help bind it so it holds its shape when cooled and shaped.
Flour
Thickens the liquid from the mushrooms into a cohesive filling that can be shaped.
Mushrooms
Add moisture and earthy flavor to the filling.
Butter
Adds richness and carries the onion flavor as it cooks.
Sherry
Adds aromatic, slightly sweet and acidic flavor to the filling.

The step that matters

Cool the filling before shaping. The filling must cool so it firms up enough to hold its shape; a warm, loose mixture will slump and break apart when shaped, dipped and fried.

Swap the onion

How well each one fits the dish's main ingredients (chicken, mushroom, butter, flour, egg, sherry, pepper):

  1. Capsicumfits better

Fit is the average pairing score against chicken, mushroom, butter, flour, egg, sherry, pepper. Candidates are from the same food group and used in at least 100 recipes.
