Why it works: Parsley and lemon match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,037 recipes. Both carry beta-phellandrene, which smells minty, terpene. The science ↓
Rice Croquettes
Ingredients
Directions
Prepare the rice
Boil the rice until very soft.
Mix the cheese, salt, and enough butter to moisten the rice.
Make the filling
Add the minced chicken or turkey, minced oysters, parsley, nutmeg, and lemon rind; mix well and moisten with cream.
Shape and fry
Take a portion of the rice, about the size of an egg, and flatten it.
Place a dessert spoonful of the mixture in the center, close the rice around it, and shape it like an egg.
Dip the croquette in the beaten egg and roll it in pounded cracker.
Fry in boiling hot lard until golden brown.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Rice
- Forms the soft starchy shell that holds the filling together.
- Egg
- Binds the beaten egg coating so the cracker crumbs adhere.
- Cheese
- Adds savoury flavour and helps the rice bind together.
- Cream
- Adds moisture to the filling so it stays tender rather than dry.
The step that matters
Closing the rice around the filling. If the rice shell is thin or cracked, the filling can leak out during frying. Shaping it smoothly and evenly keeps the croquette sealed and cooking uniformly.
Swap the lemon
How well each one fits the dish's main ingredients (rice, cheese, butter, meat, oyster, parsley, nutmeg):

- Figfits less well
- Limefits less well
Fit is the average pairing score against rice, cheese, butter, meat, oyster, parsley, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
