Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Boiled fish
Forms the main body of the croquettes and supplies their savory flavour.
Flour
Helps the egg and milk form a batter that binds the coating to the fish.
1 egg
Binds the batter so it clings to the fish balls and sets when fried.
Cracker crumbs
Form a crisp outer crust that browns during frying.

The step that matters

Fry until pretty brown. Frying in hot oil browns the crumb coating through the Maillard reaction and crisps its surface. Oil that is too cool lets the croquettes soak up grease and turn pale and soggy before the coating sets.

Swap the parsley

How well each one fits the dish's main ingredients (fish, pepper, flour, egg, milk):

  1. Nutmegfits about as well
  2. Parsleythe original
  3. Turmericfits about as well
  4. Cardamomfits about as well

Fit is the average pairing score against fish, pepper, flour, egg, milk. Candidates are from the same food group and used in at least 100 recipes.
