Ingredients

Directions

  1. Remove the skin and bones from the chicken and pound the meat very fine.

  2. Mix the chopped salt pork with the chicken and rub through a sieve.

  3. In a saucepan, combine the stale bread crumbs and fresh milk, cooking over low heat while stirring until smooth.

  4. Mix the chicken with the cooked bread and milk, adding the white stock, lemon juice, onion juice, salt, and pepper.

  5. Add the egg yolks and fold in the beaten egg whites gently.

  6. Grease a pan with butter. Prepare a pot of boiling water.

  7. Dip one spoon in the boiling water, fill it with the mixture, then dip another spoon in hot water and transfer the mixture into it.
