Veal Pie

Oven, in the book's wordsA rather quick oven

Ingredients

Directions

The book says “a rather quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Boil the knuckle of veal with a little coarse sea salt until the meat falls off the bone.

  2. Remove the meat and boil the bone and gristle until the liquid turns to jelly when cold.

  3. Layer the veal, hard-boiled eggs, and breakfast bacon in a deep dish until full.

  4. Melt the jelly from the liquid, season with pepper and salt, and pour over the pie.

Bake and serve

  1. Cover with puff pastry, leaving vents for steam, and bake at 400°F (200°C) until the pastry is done.

  2. Let the pie cool completely before serving.

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal knuckle
Breaks down into meat and gelatin-rich jelly that sets the pie's filling.
Hard-boiled eggs
Add firm texture and mild richness in layers through the filling.
Breakfast bacon
Adds salty, savoury fat that flavours the meat layers.
Puff pastry
Forms a flaky, golden crust that browns in the oven.

The step that matters

Melt the jelly from the liquid, then pour it over the pie. The jelly must be fully melted to pour, but the pie must then cool completely so the gelatin sets and the slices hold their shape.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
