Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pineapple
Provides the main flavor and, once sieved, the smooth body of the cream.
Sugar
Sweetens the mixture and thickens the pineapple as it simmers.
Gelatine
Sets the mixture so it holds its shape when chilled.
Cream
Whipped and folded in, it adds lightness and richness.

The step that matters

Dissolve the gelatine fully before adding it. Gelatine only sets properly when it is completely hydrated and evenly dispersed. Undissolved granules leave gritty pockets and weak spots, so the mixture should be smooth before it goes into the mold.
