Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fresh cream or milk
Provides the liquid base and richness that gives the dessert its body.
Chocolate
Supplies the chocolate flavor and, as it melts into the cream, the dessert's color.
Egg whites
Beaten whites trap air and add lightness and a foamy, airy texture to the mixture.

The step that matters

Pouring the hot chocolate over the egg whites. Stirring quickly and thoroughly while combining keeps the hot mixture from cooking the whites in lumps and helps them blend evenly into a smooth, light cream.
