Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweet thick cream
Provides fat and richness, giving the ice cream its body and smooth mouthfeel.
Powdered sugar
Adds sweetness and lowers the freezing point, keeping the ice cream softer.
Fresh milk
Adds liquid and milk solids that carry the vanilla flavor into the base.
Vanilla bean
Supplies the primary vanilla aroma and flavor.

The step that matters

Beat the mixture to a stiff froth. Whipping air into the cream before freezing creates bubbles that keep the ice cream light rather than dense and icy. Beating again each time the freezer is opened helps break up ice crystals as they form.
