Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Fine table rice
Forms the bulk of the pilaf, absorbing the syrup and ghee as it cooks.
Ghee
Coats the grains during frying, adding fat and a rich, nutty flavour.
Sugar
Makes a syrup that sweetens the rice and gives it a glossy finish.

The step that matters

Pouring the syrup over the rice. Enough syrup must cover the rice so the grains absorb sweetness evenly. Too little leaves them dry and uneven, while too much makes the rice wet and sticky.

Swap the raisin

How well each one fits the dish's main ingredients (rice, ghee, sugar, almond, cardamom, saffron):

  1. Limefits better
  2. Coconutfits better
  3. Lemonfits about as well
  4. Raisinthe original

Fit is the average pairing score against rice, ghee, sugar, almond, cardamom, saffron. Candidates are from the same food group and used in at least 100 recipes.
