Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main meat, which becomes tender through long, slow simmering.
Ghee
Carries the spices and helps the chicken and onions brown for deeper flavour.
Onions
Browned onions add sweetness and, once chopped into the pot, body to the gravy.
Ground onions
Dissolve and thicken the gravy while adding onion flavour.

The step that matters

Frying the chicken until rich brown. Browning triggers Maillard reactions that create savoury, roasted flavours in the fat and meat. Pale chicken leads to a flatter gravy, so the colour should be deep before adding liquid.

Swap the coriander

The recipe marks coriander as optional. How well each one fits the dish's main ingredients (ghee, onion, turmeric, ginger, garlic, chicken):

  1. Cuminfits better
  2. Cardamomfits about as well
  3. Corianderthe original
  4. Thymefits less well

Fit is the average pairing score against ghee, onion, turmeric, ginger, garlic, chicken. Candidates are from the same food group and used in at least 100 recipes.
