Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main protein, which becomes tender with slow frying and a little added water.
Ghee
Fat that fries the onions and carries the spices, adding richness and browning.
Onions
Browned in the ghee to add sweetness and a deep, savoury flavour.

The step that matters

Frying the chicken until tender. Chicken can turn tough if cooked too fast or too dry. Gentle frying with stirring, and a little water if it is tough, keeps the meat moist while the proteins relax and soften.
