What each ingredient does

Eggs
Set when cooked, binding the onions and chillies into a soft, cohesive filling.
Stale bread
Provides the structure that holds the filling, and stale slices absorb less moisture so they stay firm.
Milk
Thins the egg mixture, giving it a softer, more tender texture as it sets.
Butter
Adds fat and richness to the bread, promoting browning and flavour.
Onions
Add sweetness and savoury depth when browned in ghee.

The step that matters

Cook the egg mixture until just set. Eggs turn firm and rubbery when overcooked, and they keep cooking from residual heat. Removing the pan while the mixture is still slightly soft keeps the filling tender.

Swap the onion
