Ingredients

Directions

Prepare the crab

  1. Clean and boil the crabs in salted water.

  2. Remove the crabs from their shells, pick and clean the meat, and reserve the coral.

  3. Chop and mince the crab meat, then add the onion, ginger juice, lime juice, pepper, salt, and mushroom ketchup.

Cook the filling

  1. Melt the butter or ghee and fry the mixture until the butter is absorbed.

  2. Add a little stock or gravy and remove from heat as soon as it begins to dry.

Fill and finish

  1. Butter the shells and fill them with the crab mixture.

  2. Grind the coral and mix it with the breadcrumbs, then sprinkle over the filled shells with bits of butter or ghee.

  3. Bake for a few minutes or fry in ghee on one side.

What each ingredient does

Sea crabs
Provide the main body of meat that forms the filling.
Butter or ghee
Adds richness and moisture while frying the filling and helps the topping brown.
Bread crumbs
Form a crisp, golden topping over the filled shells.
Mushroom ketchup
Adds savoury depth and umami to the crab filling.

The step that matters

Remove the filling from heat as soon as it begins to dry. Crab meat is delicate and overcooking toughens its protein and drives off moisture, leaving a dry, rubbery filling. Stopping early keeps it tender and juicy before baking.

Swap the lime

How well each one fits the dish's main ingredients (crab, onion, ginger, pepper, mushroom, ketchup, butter):

  1. Lemonfits about as well
  2. Limethe original
  3. Avocadofits less well
  4. Coconutfits less well

Fit is the average pairing score against crab, onion, ginger, pepper, mushroom, ketchup, butter. Candidates are from the same food group and used in at least 100 recipes.
