Brown Soup

Ingredients

Directions

Make the broth

  1. Cut the mutton or neck into pieces and wash well.

  2. Place the meat in a pot with the cold water, chopped onion, and pounded ginger.

  3. Bring to a boil and cook until the meat is tender and separates from the bone, skimming off any scum.

  4. Strain the soup and let it cool, then remove the fat.

Finish and serve

  1. In a saucepan, warm the butter or ghee, then brown the sliced onions and bread crumbs.

  2. Pour in about 2 cups of the soup, add salt to taste, and a pinch of pepper if desired.

  3. Serve with bits of fried bread, called sippets.

What each ingredient does

Mutton or neck
Bones and connective tissue release gelatin into the water, giving the broth body and a rich, savory flavor.
Cold water
Starting cold and heating slowly draws flavor and gelatin out of the meat into the liquid.
Onion
Simmered in the broth it adds savory sweetness, and browned onions in butter add deeper aroma.
Green ginger
Adds a warm, fresh, pungent aroma that cuts through the richness of the meat.
Butter or ghee
Adds fat for richness and a rounded, nutty flavor when warmed and browned with the onions.

The step that matters

Strain the soup and let it cool, then remove the fat. Fat floats on hot broth and mixes in, but when chilled it solidifies on the surface, so it lifts off cleanly. Removing it keeps the soup light and clear.

Swap the ginger

How well each one fits the dish's main ingredients (mutton, onion, butter, bread, pepper):

  1. Garlicfits better
  2. Parsleyfits better
  3. Thymefits better
  4. Gingerthe original

Fit is the average pairing score against mutton, onion, butter, bread, pepper. Candidates are from the same food group and used in at least 100 recipes.
