To Preserve Corn Beef
Ingredients
Directions
Prepare the meat
Salt the meat according to the directions in recipe No. 253.
On the third day, remove the meat from the brine and boil it as you would for salted tongue.
Cut the boiled meat into pieces of about ½ to 1 lb.
Roast and preserve
Warm some ghee or lard in a pot according to the amount of meat.
Add the meat and roast until no water remains.
Once completely cold, pack the meat in a clean, dry jar.
Pour hot pure ghee over the meat, ensuring it is 2 to 3 inches thick.
When removing meat from the jar, cover the top again with ghee to prevent spoilage.
Keep the jar well corked.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Meat (corned beef)
- Is the main component, which is salted, boiled, cut, and roasted before preserving.
- Ghee or lard
- Fat that roasts the meat and, poured over it, seals the jar against air and spoilage.
- Coarse sea salt
- Cures the meat during the brining stage before it is boiled and roasted.
The step that matters
Removing all water during roasting. Any water left in the meat can cause spoilage in the jar. Roasting until no water remains drives it off, so the fat layer can keep the meat preserved.
