Roast Pigeons

Ingredients

Directions

  1. Pick, draw, and singe the pigeons, then wash them well in cold water.

  2. Truss the pigeons by closing the tail end with a wooden pin, skewer through the wings and body, and tie the legs with string.

  3. Make stuffing with minced cold ham, bread crumbs, milk, minced onion, and season with salt and pepper.

  4. Stuff the pigeons' breasts and close the openings with skewers.

  5. Heat ghee in a pan, then add the pigeons breast down, seasoning with more salt.

  6. Roast until brown and tender, turning to cook evenly.

  7. For gravy, add a spoonful of hot water to the pan drippings, stir, and pour over the pigeons before serving.
