Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Leg of mutton
Provides the main protein, which softens and browns during frying and simmering.
Ghee or lard
Fat that conducts heat for browning the meat and carries the spice flavours.
Onion
Adds sweetness and body to the spice base as it cooks down.
Dry red chillies
Provide heat and colour to the spice base.
Turmeric
Adds earthy flavour and a yellow colour to the sauce.

The step that matters

Simmering until tender and dry. Meat is tough until its connective tissue breaks down through long, gentle cooking in liquid. If it is still tough, more water and further cooking are needed before the liquid is reduced away.
