  4. Cut the potatoes in halves or quarters and add them to the pot.

Brown and finish

  1. In another pot, warm the ghee and brown a few sliced onions with the flour.

  2. Remove the meat from the pot.

  3. Brown the meat with the onions and flour.

  4. Pour in the gravy.

  5. Let the whole mixture simmer until fully cooked.

What each ingredient does

Mutton or beef
Provides the main meat, which becomes tender as it simmers in the broth.
Onions
Soften into the gravy for sweetness, and browning them with flour thickens and deepens the sauce.
Flour
Browned with the onions, it thickens the gravy and adds color.
Potatoes
Absorb the cooking liquid and soften, adding body to the stew.
Ghee
Fat that carries the browning of the onions and flour, adding a rich flavor.

The step that matters

Brown the meat with the onions and flour. Browning builds flavor through the Maillard reaction, but meat that is wet or crowded in the pan steams instead of browning, so it should be dry and cooked in batches.

Swap the mint
