Why it works: Ginger and pepper match in chemistry and in kitchens. They rank in the top 9% of all ingredient pairs, and cooks put them together in 6,800 recipes. Both carry 2-isopropyl-3-methoxypyrazine, which smells earthy, pea. The science ↓

Brinjal Bake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the eggplant

  1. Parboil the brinjals whole. Once cool, cut them in half and scoop out the pulp, being careful not to break the skins.

Make the filling

  1. Warm the ghee in a pan and fry the minced onion until translucent.

  2. Add the minced meat, minced ginger, pepper, salt, and optional minced green chili. Fry until browned.

  3. Mix in the brinjal pulp and let it cool.

Stuff and cook

  1. Stuff the brinjal skins with the prepared mixture, smoothing the top.

  2. Beat the egg and spread it over each brinjal, then sprinkle with bread crumbs.

  3. Fry in a pan with ghee or place on a baking sheet in a 350°F (175°C) oven until golden.

  4. Serve hot with boiled potatoes and other vegetables.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Brinjals
Hold the filling and provide the soft, tender body of the dish once scooped and cooked.
Minced meat
Provides the savory bulk of the filling and browns to add flavor.
Egg
Binds the topping so the bread crumbs adhere and set into a golden crust.
Bread crumbs
Form a crisp, browned topping when fried or baked.
Onion
Softens and sweetens as it fries, building the base flavor of the filling.
Ghee
Adds rich fat for frying and encourages browning and a nutty aroma.

The step that matters

Scooping the parboiled brinjals. Cutting and scooping the cooled halves without tearing the skins matters because the skins are the only container for the filling and must hold their shape through stuffing and cooking.

Swap the ginger

How well each one fits the dish's main ingredients (pepper, meat, egg, bread, onion, ghee):

  1. Garlicfits better
  2. Turmericfits better
  3. Parsleyfits better
  4. Gingerthe original

Fit is the average pairing score against pepper, meat, egg, bread, onion, ghee. Candidates are from the same food group and used in at least 100 recipes.
