Home Made Pork Sausages

Ingredients

Directions

Prepare the filling

  1. Chop the pork and mix it with the bread crumbs, herbs, and seasonings.

  2. Ensure the herbs are dried and powdered before adding.

Fill the sausages

  1. Use a mincing machine with a long nozzle to pass the mixture through.

  2. Prepare sausage skins by soaking them in boiling water to soften.

  3. Slide one end of the skin over the nozzle and fill it with the mixture at regular intervals.

  4. Pinch the mixture and twist the sausage at intervals to form links.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pork
Provides the meat and fat that give the sausages their body and juiciness.
Bread crumbs
Absorb moisture and fat, helping the filling hold together and stay tender.
Salt
Seasons the meat and helps it bind into a cohesive filling.
Sage
Adds the characteristic savoury, aromatic flavour of pork sausage.

The step that matters

Pinch and twist the links at intervals. Filling the skin unevenly or twisting without firmly pinching the mixture can leave air pockets or links that burst or unravel during cooking. Even filling and firm twists keep each sausage uniform.

Swap the nutmeg

How well each one fits the dish's main ingredients (pork, bread, sage, pepper):
