Curry Puffs, Cocked-hats

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Shape

  1. Roll out the pie crust to ¼ inch thick.

  2. Cut into circles the size of a saucer.

  3. Place a spoonful of curry mince on each circle.

  4. Fold the circles over to form three-cornered shapes and seal the edges.

Cook

  1. Bake at 400 °F (200 °C) or fry in ghee as desired.

  2. If baking, brush the tops with egg yolk for color.

What each ingredient does

Egg yolk
Brushed on the tops before baking, it promotes browning and a glossy color.
Ghee
Fat used for frying, it carries heat and gives the puffs a rich, crisp surface.

The step that matters

Sealing the edges. If the edges are not pressed firmly closed, filling can leak out during baking or frying and the puffs may open or burst. A tight seal keeps the filling enclosed as steam forms.
