Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Egg yolks
- Set the custard into a thick, smooth texture as they cook gently.
- Sugar
- Sweetens the custard and balances the sharpness of the orange.
- Cow's milk
- Provides the liquid base that sets with the egg yolks into a creamy custard.
- Orange rind
- Adds the aromatic orange oil and bitter flavour that defines the dish.
- Orange juice
- Adds acidity and fresh citrus flavour to the custard.
The step that matters
Pouring the boiling milk into the egg mixture. Adding hot milk too quickly can scramble the egg yolks into lumps. Pouring gradually while beating tempers the yolks so the custard stays smooth and sets evenly.
Swap the orange
