Cheese Cakes

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

  2. Beat the eggs in a bowl.

  3. Add the khoa, sugar, nutmeg, and essence to the eggs and mix well.

  4. In a separate bowl, combine flour and butter, adding just enough water to form a dough.

  5. Roll out the dough very thin and line small tart tins with it.

Bake

  1. Pour the cheese mixture into the lined tins until half full.

  2. Bake in the preheated oven until set and lightly golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Set the filling into a firm, sliceable custard as they cook.
Cream or khoa
Adds richness and moisture to the filling.
Sugar
Sweetens the filling and helps it brown lightly in the oven.
Butter
Adds fat to the dough, giving it tenderness and a rich flavour.
Flour
Forms the structure of the dough case that holds the filling.

The step that matters

Rolling the dough very thin. A thin dough case bakes through and crisps at the same rate as the filling. A thick case stays doughy and underbaked at the base while the filling sets.

“What each ingredient does” and “The step that matters” were written by Claude from this recipe’s own method and reviewed in samples by CompKitchen.
