Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Pounded green ginger
Provides the main spicy flavour of the drink.
Cream of tartar
Adds acidity that gives the drink a sharp, tangy edge.
White sugar
Adds sweetness and feeds the fermentation.
Toddy
Brings the fermentation that gives the drink its fizz.
Lime
Adds acidity and aroma from the juice and rind.

The step that matters

When nearly cold, add ⅓ cup of fresh toddy. Live fermenting culture is sensitive to heat. Adding it to a hot liquid can kill it, so the mixture must be cool enough that the fresh toddy can start fermentation properly.

Swap the lime

How well each one fits the dish's main ingredients (ginger, cream, sugar):

  1. Vanillafits better
  2. Coconutfits better
  3. Lemonfits about as well
  4. Limethe original

Fit is the average pairing score against ginger, cream, sugar. Candidates are from the same food group and used in at least 100 recipes.
