What each ingredient does

Glacial acetic acid
Provides the sharp, sour acidity that gives vinegar its character.
Sugar
Burned to dark caramel, adding color and a deeper, toasted aroma.

The step that matters

Burning the sugar until dark. Sugar darkens quickly once it passes the caramel stage and can turn bitter or smoky if overcooked. Adding the tablespoon of water before removing it from heat helps stop the browning and keeps the flavor controlled.
