What each ingredient does
- Stale bread
- Toasted bread gives the water a browned, roasted flavour and a light toasty aroma.
- Boiling water
- Extracts the toasted flavour and colour from the bread into a clear liquid.
The step that matters
Toasting the bread until dark brown. Toasting builds the roasted flavour through browning, but if the bread goes past dark brown it turns bitter and burnt, and that bitterness passes into the water.
