What each ingredient does

Coffee
Finely ground coffee provides the flavour compounds that the hot water extracts during brewing.
Boiling water
Hot water dissolves flavour compounds from the ground coffee and carries them through into the pot.

The step that matters

Allow it to brew for 5 to 8 minutes. Brewing too briefly leaves the coffee weak and under-extracted, while brewing too long can draw out bitter compounds. Watching for the coffee to be ready helps balance strength and bitterness.
